Originally called Jersey Shield, the idea was to make a 100% Jersey milk cheese from Jamie's herd that had previously only been used for drinking milk. Developed over a period of ten years, the original cheese had a natural rind and dry consistency. William Oglethorpe, head cheese ager at Neal's Yard suggested washing the cheese in brine before ageing, and thus Ogleshield was born. After the cheese is moulded it is washed in a special brine every three days and aged. The final product is an outstanding table cheese and cooking cheese. Rich Jersey butter leads into a broth-like savouriness with the rind adding a mildly pungent nutty flavour with a slightly gritty texture. Another personal favourite of Jeremy's.

Upon completion of your order, you will be asked to select a delivery date. We will always work to deliver to you on your date chosen but sometimes delays may occur. We will contact you if a change to the delivery date is required. At check-out, your delivery charge will be calculated.

All our products are packed in Cheese Cuisine boxes (unless you have ordered a giftbox or added a hamper to your order) with filling (bubble wrap where needed) and gel ice packs when required, to preserve the quality of fresh products.

Your cheese will arrive wrapped in speciality cheese paper and we recommend you refrigerate it as soon as it arrives. We recommend using your cheese within five days of purchase, however, many cheeses will last far longer. To serve, take your cheese out of the fridge, unwrap, and let it come to room temperature before serving (about an hour). To see more about taking care of cheese click here.

Wherever possible, we use environmentally friendly packaging, including recycled and compostable material. We are not big on paper waste; all the information on our products can be found on our website. Grandpa Montgomery bought the farm in 1911 when cheddar cheese was already being made, like most farms in Somerset, and to this day they still make the cheese in much the same way. The milk is all from their own cows, and unpasteurized. The cheese is wrapped in cloth to let it breathe. The traditions the farm sticks by are essential in producing those complex and rich flavours.
