Mrs Kirkham's is the last of the traditional Lancashire producers. This farmhouse cheese is made from their own heard of Friesian cows and produced in a traditional manner using a blend of both morning and evening milkings. This tradition goes back to when the farmer only had a few cows and could not produce enough milk to fill the moulds in one milking. This is one of the key components in the crumbly style of this cheese. The cheese is then cloth bound and rubbed with butter to allow it to breathe, then aged for two to six months. The younger cheese is fresh, fruity, buttery and crumbly, with a tangy ending, much like yoghurt or crème fresh. This is the style we sell. When left to age it becomes almost spreadable, creating a whole new experience.
Upon completion of your order, you will be asked to select a delivery date. We will always work to deliver to you on your date chosen but sometimes delays may occur. We will contact you if a change to the delivery date is required. At check-out, your delivery charge will be calculated.
All our products are packed in Cheese Cuisine boxes (unless you have ordered a giftbox or added a hamper to your order) with filling (bubble wrap where needed) and gel ice packs when required, to preserve the quality of fresh products.
Your cheese will arrive wrapped in speciality cheese paper and we recommend you refrigerate it as soon as it arrives. We recommend using your cheese within five days of purchase, however, many cheeses will last far longer. To serve, take your cheese out of the fridge, unwrap, and let it come to room temperature before serving (about an hour). To see more about taking care of cheese click here.
Wherever possible, we use environmentally friendly packaging, including recycled and compostable material. We are not big on paper waste; all the information on our products can be found on our website. Ruth Kirkham began making the now famous Lancashire in 1978. Hard work and persistence for quality enabled the farm not only to build a new cheese making dairy, which was completed in May 2008, but also a state of the art milking parlour and five-star accommodation for their now 100 strong herd of cows. Their son Graham, who now takes lead at the dairy, takes pride in the cheese they make, so it was important to get every part of the process right. He says, “Happy cows = good quality milk = good cheese.”
