From Ford Farm, this cheddar style goats cheese begins its journey in Dorchester, at their dairy, with milk from farms around Dorset. Using a traditional recipe and artisan methods that date back centuries, the cheese is pressed into 27kg moulds, cloth bound and sent to Wookey Hole to age in caves hundreds of metres below the Mendip Hills. The caves at Wookey Hole benefit from year round twelve degree room temperature and perfect humidity for the slow ageing process and allow the cheese to take on the surface moulds giving each truckle its unique character. Cave Aged Goat has won a plethora of awards, but most notable would be Super Gold at the 2016 World Cheese Awards, the largest global cheese awards, with over 3,500 entries each year, as well as Best British Cheese at the awards. Stark white in colour, the cheese starts fresh with lemony notes that lead into a pleasant, mild farmy "goatyness". When well aged, it has a long finish with hints of caramel.
