From Hawkstone Abbey Farm in Cheshire, the Appleby family have been making cheese for three generations. Their Double Gloucester comes from a three hundred year old recipe which the Applebys resurrected in 1986. They researched the making of Double Gloucester using the original recipe book from when Lucy Appleby MBE, Edward’s mother, learnt her craft of cheese making at college. After years of experimenting, they eventually settled on a recipe they found in the archives of the Ministry of Agriculture Fisheries and Food, and this recipe continues to be used today. Double Gloucester has a history dating back over three hundred years and is believed to be the UK's first coloured cheese, when farms used to use carrots and beets to dye the cheese. Now the colour is achieved with annatto derived from the seeds of the achiote tree. The cheese has a lovely fruity mellow ease to it, with a nutty finish and tangy bite, the ageing room revealing itself in the rind.

All our products are packed in Cheese Cuisine boxes (unless you have ordered a giftbox or added a hamper to your order) with filling (bubble wrap where needed) and gel ice packs when required, to preserve the quality of fresh products.
Your cheese will arrive wrapped in speciality cheese paper and we recommend you refrigerate it as soon as it arrives. We recommend using your cheese within five days of purchase, however, many cheeses will last far longer. To serve, take your cheese out of the fridge, unwrap, and let it come to room temperature before serving (about an hour). To see more about taking care of cheese click here.
Wherever possible, we use environmentally friendly packaging, including recycled and compostable material. We are not big on paper waste; all the information on our products can be found on our website. The dairy and farm are part of the rhythm of family life at Hawkstone Abbey Farm. The farm has undergone a conversion towards a more regenerative and sustainable way of farming. Each cloth bound cheese encapsulates a moment in time – the soil, the traditional grass pastures, the gentle cows, the weather, the season. The fresh, raw milk is the master ingredient, to which they add traditional cultures, rennet, salt from the Cheshire Plains and the extract of the annatto seed, which gives their coloured Cheshire its warm sunrise colour. These time capsules are matured in old barns with Napoleonic timbers. The provenance and flora of their natural surroundings give their Appleby’s cheeses a flavour that is totally unique.
