Gorwydd Caerphilly Welsh Rarebit
A classic Welsh Rarebit, you'll never want basic cheese on toast again after chomping this down!

A classic Welsh Rarebit, you'll never want basic cheese on toast again after chomping this down!
250g Gorwydd Caerphilly
150ml Pilton cider
50ml single cream
1 – 2 tbsp Worcestershire Sauce
1 tsp Otter Vale mustard
Pinch of paprika
1 egg yolk
Multigrain sourdough bread
Soft butter
Mix the cider, Worcestershire Sauce, mustard and paprika to make the sauce. Cook over medium heat in a saucepan until reduced by a third.
When the sauce is done, add in the cheese and allow to melt.
Turn on your grill to warm up.
Slice and butter the bread and grill until lightly toasted on both sides.
Take the pan off the heat and whisk in the egg yolk and allow to cool slightly.
Spread your sauce on the toast and put back under the grill for 4 minutes or so, until the sauce is bubbling slightly.
