Witheridge Truffade

A simple warming winter side dish perfect to pair with sausages or ham and salad. Indulgently cheesy!

Method and Ingredients

Ingredients

400g to 500g of new potatoes

150g of pancetta/lardons/thick bacon, chopped

2 echalion shallots, halved and thinly sliced

One tbsp lard or duck fat

200g to 300g of Witheridge cheese, sliced

Salt and pepper to taste

Method

Boil your potatoes until just soft. Remove the skins if you like, though we prefer to keep them on. Slice and leave to cool.

While your potatoes are boiling, fry your pancetta/lardons/bacon in a pan and set aside.

In the fat from the pancetta/lardons/bacon fry your shallots on a low heat until soft.

In a large oven-safe dish melt your fat and layer your potatoes, and brown on one side.

Flip your potatoes and add salt and pepper to taste (though you won't need much, as the bacon will add salt). Then layer the pancetta/lardons/bacon and shallots and cover with slices of Witheridge cheese.

Place a lid on the dish and either let melt on the stove or put in the oven for five minutes if you have it on for cooking sausages.

Serve with salad and ham, or sausage of your choice. Enjoy!
