Hard cheese is, as the name suggests, a hard-textured cheese. This means that it has significant resistance to deformation and breakage and will hold its shape when cut or sliced. It also tends to have a lower moisture content than other cheeses. Most hard cheeses are made by separating and draining most of the whey, before pressing the curd. The pressed curd is then usually brined or waxed, depending on the type of cheese. Parmesan, cheddar, pecorino, gruyere and Emmental are all popular kinds of hard cheese.
